Tikka Masala Sauce
Time
- Prep: 15 min
- Cook: 1 hr
- Total: 1 hr 15 min
Servings: 8
Serving: about ½ cup (120 ml / ~4 fl oz)
Ingredients
Sauce Base
- Ghee: 42 g (3 Tbsp) — or the same volume of neutral oil
- Yellow onion: 250 g (1 large) — finely diced; weight after peeling
- Garlic: 25 g (about 6 large cloves) — finely grated or minced
- Fresh ginger: 20 g — peeled and finely grated
- Tomato paste: 30 g (2 Tbsp)
- Passata: 500 g (about 2 cups) — plain, smooth strained tomatoes without added herbs
- Water: 180 ml (¾ cup) — plus more as needed to prevent sticking or loosen the finished sauce
- Fine salt: about 6 g (1 tsp) — divided; half with the onion, then adjust to taste at the end
Sauce Spices
- Ground coriander: about 4 g (2 tsp)
- Cumin: about 3 g (1½ tsp) — ground
- Kashmiri chili powder: about 4 g (2 tsp) — pure ground chile
- Garam masala: about 3 g (1½ tsp) — for the base; finishing portion listed separately below
- Ground turmeric: ¼ tsp
- Black pepper: ¼ tsp — finely ground
- Cayenne pepper: ⅛-¼ tsp — optional, for additional heat
Sauce Finish
- Heavy cream: 180 ml (¾ cup)
- Kasuri methi: 1 Tbsp — dried fenugreek leaves; loosely filled, measured before crushing
- Garam masala: about 1 g (½ tsp) — for finishing; use less if the blend is especially strong
- Unsalted butter: 14 g (1 Tbsp)
- Granulated sugar: 0-8 g (0-2 tsp) — only as needed to balance sharp tomato flavor
- Lemon juice: 0-5 ml (0-1 tsp) — only as needed after salting
Instructions
1. Brown the onion
- Heat 42 g (3 Tbsp) ghee in a heavy saucepan or deep saute pan over medium heat.
- Add 250 g (1 large) diced yellow onion and half of about 6 g (1 tsp) fine salt. Reserve the remaining salt for the final adjustment.
- Cook 15-20 minutes, stirring regularly, until very soft and evenly golden brown. Reduce the heat if the edges darken too quickly.
- If browned bits stick before the onion softens, add 1 Tbsp water, scrape them up, and continue cooking.
- The onion should mash easily against the pan and smell sweet and savory. Allow more time if it is still firm.
2. Cook the aromatics and tomato paste
- Add 25 g (about 6 large cloves) garlic and 20 g fresh ginger.
- Cook 1-2 minutes, stirring, until fragrant and the sharp raw aroma softens.
- Add 30 g (2 Tbsp) tomato paste. Cook 2 minutes, stirring and spreading it across the pan, until slightly darker and beginning to stick lightly.
3. Bloom the spices
- Reduce the heat to low and add:
- about 4 g (2 tsp) ground coriander
- about 3 g (1½ tsp) ground cumin
- about 4 g (2 tsp) Kashmiri chili powder
- about 3 g (1½ tsp) garam masala
- ¼ tsp ground turmeric
- ¼ tsp black pepper
- ⅛-¼ tsp cayenne pepper, if using
- Stir continuously for 20-30 seconds, just until fragrant, then immediately add the tomatoes in the next step.
- If the mixture becomes dry and starts catching, add a tablespoon of water.
4. Concentrate the tomato base
- Add 500 g (about 2 cups) passata and scrape the bottom of the pan.
- Cook uncovered over medium-low heat for 10-15 minutes, stirring frequently, until noticeably thicker and darker. Use a splatter screen if needed.
- The mixture should gather behind the spoon rather than immediately flowing back. Small beads of fat may appear around the edges, and the raw tomato aroma should soften.
5. Simmer and blend
- Stir in 180 ml (¾ cup) water, scraping up any remaining browned bits.
- Simmer gently for 10-15 minutes, stirring occasionally. Add small splashes of water if it begins sticking.
- Check that the onion is completely tender, then remove the sauce from the heat.
- Blend with an immersion blender until smooth, about 1-2 minutes. Keep the blender head submerged to limit splashing.
- Aim for a smooth, thick sauce that still moves readily when stirred. The cream will loosen it further.
6. Add cream and finishing spices
- Return the blended sauce to low heat.
- Stir in 180 ml (¾ cup) heavy cream.
- Crush 1 Tbsp kasuri methi between your palms and add it.
- Add about 1 g (½ tsp) garam masala. If the blend is especially strong in clove or cinnamon, start with half this finishing portion and taste before adding the rest.
- Simmer gently for 5 minutes, stirring regularly.
7. Finish and adjust
- Remove from the heat and stir in 14 g (1 Tbsp) unsalted butter.
- Taste a slightly cooled spoonful, then adjust in this order:
- Salt: Add the reserved salt gradually, tasting between additions. You may not need all of it, particularly with salted passata or when serving with seasoned chicken.
- Sharp tomato flavor: Add granulated sugar ½ tsp at a time, using 0-8 g (0-2 tsp) in total, only as needed.
- Too thick: Stir in warm water 1 Tbsp at a time until spoonable.
- Too rich or dull after salting: Add lemon juice ¼ tsp at a time, using 0-5 ml (0-1 tsp) in total. Omit it if the sauce already has enough tang.
- The finished sauce should be smooth and glossy, coating a spoon while pouring in a thick ribbon. Use that texture as the guide rather than reducing to an exact volume.
- Use immediately or refrigerate as described below. The sauce is fully finished, including the cream, fenugreek, finishing garam masala, and butter.
Notes / Make-ahead / Variations
- Timing: Allow 15 minutes prep and 50-60 minutes cooking, about 65-75 minutes total. Give firm onions more time before blending.
- Yield: The base recipe makes approximately 4 cups / 960 ml, depending on reduction: about 8 half-cup sauce portions, or enough for 4-6 main-dish servings with chicken, paneer, or vegetables.
- For chicken tikka masala: Use one finished batch with approximately 680-900 g / 1½-2 lb raw boneless chicken, marinated and cooked separately. Follow Chicken Tikka Masala for the marinade and cooking method. The finished sauce already contains the cream and butter.
- Paneer or vegetables: Brown paneer or roast vegetables separately, then fold them into the finished sauce and heat through. Add water as needed to keep it spoonable.
- Spice measures: Spice weights are approximate; spoon measurements are practical for these quantities. Garam masala is split between Sauce Spices and Sauce Finish so each addition is measured separately.
- Kashmiri chili substitute: Use the same spoon measure of sweet paprika, plus a small pinch of cayenne. Adjust additional cayenne after tasting; chile heat varies by brand.
- Fenugreek: Use dried fenugreek leaves for their savory, slightly bittersweet aroma. Fenugreek seeds or ground seeds are not an equal substitute.
- Scaling: Use a larger pan for larger batches and judge reduction by texture. Browning and reduction can take longer with more ingredients.
- Method references: Concentrating the tomato base before adding water follows Swasthi Shreekanth's tikka masala method. Finishing with cream and dried fenugreek also appears in Archana Mundhe's version.
Storage & reheating
- Refrigerate: Transfer the finished sauce to shallow containers and refrigerate promptly, within 2 hours. Use within 3-4 days. See CDC leftover storage guidance.
- Freeze the blended base: For best texture, prepare through step 5 and freeze for up to 3 months. Thaw in the refrigerator, reheat, and complete the cream, fenugreek, garam masala, and butter finish in steps 6-7 before using as prepared sauce.
- Reheat finished sauce: Warm over medium-low heat, stirring frequently and adding a little water as needed, until hot throughout at 165°F / 74°C. See reheating temperatures.
Troubleshooting
- Sauce is grainy: Make sure the onion is completely tender before blending. Blend the base until smooth before adding cream.
- Sauce catches on the pan: Lower the heat, stir more often, and add small splashes of water before it scorches.
- Sauce is sharp or heavy: Salt first, then use the sugar or lemon adjustments in step 7. Taste between additions.
